Light Roast
Eleven of the twelve coffees here are light roasts. That is the whole reason the roaster exists.
A light roast stops before the roast flavor takes over, so what is left in the cup is the coffee itself: the farm, the altitude, the way the fruit was processed. It is why the Ethiopia tastes like hibiscus and the Brazil tastes like cocoa and peanuts, from the same roaster.
